Hi everyone, its Natasha of Natashaskitchen.com. Today we're making a
mouth-watering cowboy caviar. It's a salsa that is fresh, healthy and loaded
and there's a surprising ingredient that makes every bite so juicy and delicious.
Get your chips ready because this always disappears fast. We start by slicing and
dicing 6 roma tomatoes. Transfer those to a large mixing bowl, you'll need space to
stir everything together because this makes a big party sized batch. Remove and
discard the stem and seeds from one red bell pepper. Slice your pepper into thin
strips then dice them up.
Finally dice one medium onion and it seems like a lot of onion but don't
worry, it disappears into the salsa and remember it's a big batch. Transfer those
bolts to your mixing bowl and now we conquer the jalapenos. You'll need two
jalapenos and any part of your hand that touches the jalapeno should wear a glove
because the spiciness from the jalapeno can stay on your fingers and if you
touch your eyes afterwards, you'll be in trouble. Cut off the stems and scrape out
the seeds, then thinly slice the jalapeños into strips and finally dice
them up. This is a lot of jalapeños but the overall salsa is not spicy at all
because of that special ingredient we'll add later. You'll need one large avocado,
the bigger, the better and I'll show you my easiest way to slice, peel and pit in
avocado. And for this salsa and most salsas it's best to use avocados that
are ripe but not overly soft because they keep their form in the salsa. Dice
up the avocado and add it to the bowl.
You'll need about a cup and a half of sweet corn and 15 ounces of well rinsed
and drained black beans chopped and add half a bunch of fresh cilantro. Add three
to four tablespoons of fresh lime juice and when I pick limes, I go for the ones
with the smooth skin. And if you roll the limes against the countertop before
squeezing, you will get more juice out of them. Onto that secret ingredient and
don't laugh, but it's 1/2 a cup of Italian dressing. You'll have to trust me
on this because it totally works. Also add 4 cloves of pressed garlic and you
can add salt to taste, That looks about right and all that's left to do is stir
it up and it's party time. Here we go. Oh yes, my mouth is totally watering for
this right now! YUM! And the secret really for that
amazing flavor is in the Italian dressing and the fresh lime juice, so
don't skip those. Wow! It makes this the juiciest salsa. I love
it! All right, and serve with some chips of course and I've got my favorites here
from Costco, because Costco is my jam...

making it every summer like clockwork. It is one of our favorite salsas. It is a
