I stopped here on my cross-country hitchhiking trip for one reason in particular Ramen

私は日本縦断ヒッチハイクの旅の際にここ旭川市に立ち寄りました。その理由はラーメンです

Asahikawa Ramen is very famous but I'm not sure what makes this place different from Sapporo Ramen

旭川ラーメンは大変有名ですが、札幌ラーメンと何が違うのかよく分かりません

and any of the other Ramen around Japan

札幌ラーメンだけでなく、日本中の他のラーメンとの違いも

Fukuoka's Hakata Ramen is famous for "Tonkotsu", thick pork bone broth

福岡市の博多ラーメンは”豚骨”で、その濃厚な豚骨スープで有名です

very filling and very good

大満足で非常に美味しいです

Sapporo Ramen nearby is known for Miso Ramen

近くの札幌ラーメンは、味噌スープで知られています

slightly nutty and sweet thick but not too heavy

少し木の実の風味があり、甘く、濃厚ですが、しつこくはない味です

the Miso is added to different soups stuff depending on the store

味噌ラーメンと言っても、それぞれの店によって特徴的な材料が使われています

Sapporo Ramen typically uses yellow egg noodles

札幌ラーメンの特徴は典型的な黄色い卵麺を使っていることです

and Asahikawa Ramen? welcome to the world of "Shouyu", soy sauce Ramen

旭川ラーメンの醤油ラーメンの世界にようこそ

like the others it's found everywhere in Japan

他のスープの様に、醤油ラーメンは日本の至る所で見かけます

but many argue Asahikawa does it best

しかし、私の強調したいことは旭川ラーメンが最高だということです

so where exactly is this Shouyu Ramen paradise?

それではこの醤油ラーメン天国は、正確には何処にあるのでしょうか？

We'll have to head to Hokkaido in Japan's north city of Asahikawa

日本の北部、北海道最北端の都市、旭川を目指しましょう

It's a 3 hour drive from Sapporo next to "Daisetuzan National Park" meaning

札幌から車で３時間程度、大雪山国立公園に隣接しています

the city has some of the cleanest water in the country

旭川は日本で最も綺麗な水の町としても有名です

Asahikawa is easy to navigate with a perfect grid system

また、旭川の町は碁盤の目の様にきちんと区画整理がなされているため、目的地を探すのがとても楽です

We'll visit "Baikoken", "Aoba" and "Tenkin"

これから、梅光軒、青葉、天金の三店を訪ねてみましょう

so get ready for some slurping

ラーメンを食べる準備は出来ていますか？

a lot of famous Ramen shops in Asahikawa are right around the station area

旭川の多くの有名なラーメン店は駅の付近に集まっています

Our first Ramen shop is along the shopping street

最初に目指すラーメン店は商店街沿いにあります

So I got a map at the tourist office that lists all of the Ramen places in Asahikawa around the station

観光案内所で旭川の全てのラーメン店が載っている地図を手に入れました

this one right here is also the one that I went to 14 years ago last time in Asahikawa so

すぐそこにある店は、私が１４年前、旭川に来た時、行った所です

let's try that first

Yeah I've been here before so I know what I'm getting into

以前来たことがあるので、どう行くのかよく知っています

Welcome to "Baikoken" Ramen's main shop.

梅光軒本店にようこそ

At lunch be ready to queue up, it's famous

昼食時には、すぐ行列が出来るので、有名です

the kitchen is busy with non-stop chefs at peak times serving mighty bowls of Shouyu Ramen

ピーク時には、注文をさばくのに調理場は忙しくて、てんてこ舞いです

I was last here in 2003 during my first hitchhiking trip across Japan

この前来たのは、２００３年に日本縦断ヒッチハイクの旅の時です

Now I'm back for my second bowl and I'm sure the taste hasn't changed a bit

二度目のラーメンを食べるために、今、私はここへ帰ってきました。少し味が変わったのではないかな？

"Baikoken" is the classical bowl of Shouyu Ramen

梅光軒のラーメンは伝統的な醤油ラーメンです

There are no hidden bells and whistles with this bowl

ここのラーメンには特別な隠し味や具は使われていません

Unless of course you order a topping like "Ajitama"

貴方がトッピングとして味玉を注文しなければ

That delicious half boiled egg that I can never pass up

味玉はとても美味しい半熟卵で、私は絶対注文しますが

You can see the Shouyu Ramen is lighter than "Tonkotsu" and "Miso"

醤油ラーメンは豚骨ラーメンや味噌ラーメンに比べてあっさりしています

just the right amount of oil to load up that richness

丁度、適量の油を添加すると風味が増します

"Baikoken" uses wavy noodles that collect more of the salty soy sauce broth

梅光軒は縮れ麺を使っていますが、それは醤油ラーメンのスープがよく絡むからです

It hasn't changed in 14 years, For ol' faithful, complete!

それは１４年間、全く変わっていません

I moved on to Aoba which was just a minute away from Baikoken

次に、梅光軒からほんの二、三分先の”青葉”に移動します

It came highly recommended to me by a friend

そこは友達から、ぜひ、行くようにと勧められた店です

the owner let me eat during his break to avoid the lines

ご主人は順番を待たなくていいように、彼の休憩時間にラーメンを食べさせてくれました

They're all the kinds of Ramen on the menu

店内のメニューには、あらゆる種類のラーメンがありましたが

but come on! we've come here for Shouyu Ramen exclusively

もちろん、お目当ては醤油ラーメンです

Aoba uses straight noodles, a healthy piece of "Cha-shu" pork steak

青葉はストレート麺を使い、健康な豚のチャーシュウがのっています

the winking octopus on the "Nori" seaweed a nice touch

添えられた海苔の上に描かれたウインクをしている蛸の絵がなかなか良いですね

This "Shouyu" soup is perfectly balanced

この醤油スープは抜群のバランスの良さです

The atmosphere at Aoba is authentic

青葉の雰囲気は素晴らしいですね

that the family feel of it all added to the flavor which is

家族が醸し出す雰囲気がラーメンの味を一層引き立てています

simple chicken and pork based stuff with soy sauce, light, salty and also good

簡単なチキンとポークをベースにしたスープに醤油を加えた、軽く、塩気の効いたスープは

by far one of the friendliest place

親しみやすい店の雰囲気が加わり、本当に素晴らしいものになっています

I've ever visited with a long history

また、この店は長い歴史を持っています

The Murayama family has run Aoba for three generations

村山さん家族は三代に亘たり、青葉を経営しています

Here is the founder

この人が創立者です

His son is the second generation chef and

彼の息子さんが二代目の店主

Now his son "Yu-ichi" who's behind the counter today

そして、今は、二代目の息子、”ゆういち”さんが店を切り盛りしています

I was in China until the 5th grade of an elementary school

私は小学校５年生まで中国にいました

In Beijin

北京にいました

When the war was over, I returned to Japan together with my grandparents

終戦の時、中国から祖父母と一緒に中国から帰ってきました

and started this shop in 1947 and this year we celebrate the 70th aniversary

そして、１９４７年に青葉を始めましたので、今年で７０年になります

My son has succeed this shop as the third generation owner

私の息子が三代目として店を継いでいます

Can you still keep the same good taste as that of the 70 years ago?

７０年前の素晴らしいスープの味は、今も変わっていませんか？

Certainly!

もちろんです

The shop's good taste is in the decades of cosistency

この店の美味しい味は、何世代にも亘って、変わらず引き継がれています

"Aoba" is one place simply can't miss when visiting Asahikawa

青葉は、旭川を訪れたら、必ず立ち寄る店の一つです

but it's not the last place on this tour of Ramen

しかし、ラーメン探訪ツアーは、まだ終わりません

so not far away from "Aoba" is a "Tenkin", another really famous place in Asahikawa

青葉からあまり離れてない場所に、もう一つの有名ラーメン店、”天金”があります

I can eat one more "Tenkin" is a five minute walk from "Aoba"

青葉から５分くらいの所にある天金でもう一杯食べたいですね

This shop is consistently at the top of Ramen critics and reviewers lists

天金はラーメンの批評家やレビューアーの評価で、いつも上位に位置づけられる名店です

which explains this line took an hour to get in

この一時間待ちの行列が、その事実を物語っています

waiting just makes you hungrier

長く待てば待つほど、貴方は空腹を感じてきます

many celebrities' been here

多くの有名人もこの店を訪れます

''Tenkin''s ramen is no longer secret

ドラマの撮影も珍しいことではありません

I got to "Shouyu" Ramen with a side of gyoza

私は醤油ラーメンと餃子を頼みました

right away I could see the attraction, the soup

すぐに、私はスープに引き付けられました

I had a lot of oil the temperature of Asahikawa in winter is well below zero

スープは油で溢れています。旭川の冬の温度は零度を十分下回りますので

so it said extra lard keeps the soup hot for a longer time

余分なラードがスープが冷めるのを防いでくれます

It's like insulation

一種の断熱効果ですね

there's a lot of good stuff in there too

また、沢山のおいしそうな具が入っていますね

and the taste? Divine

この味はすごいですね

but I couldn't get over that broth

このスープは本当にすごいですね

it reminded me of Van Gogh's masterpiece, The Starry Night

バンゴッホの作品“星空”を思い出しました

a galaxy of flavor swiring on the canvas

キャンバスの上に味の銀河系が散りばめられています

or bowl! ..if you're at "Tenkin"

ここ天金ではラーメンの中に

So there you have it! Asahikawa is soy sauce ramen paradise

旭川が醤油ラーメンのパラダイスであることがお分かりいただけましたか

Where you get an amazing bowl just about anywhere you go

貴方が行った先々で驚きの一杯を味わうことになるでしょう

So try them all! These three shops are excellent starting points
