So in Japan there are five types of famous beef.

日本には5つの有名な和牛がある

And today we're off to go and see one of them and that is Yonezawa beef.

今日はその中の一つ 米沢牛を食べにいくんだ

The city of Yonezawa beef is in the south of Yamagata, which is the place where I've been living the passed 3 years.

米沢市は、僕が過去３年間住んでいた 山形の南に位置している。

But somehow I've never actually eaten any steak from there.

でも何故か僕は米沢牛のステーキを 一度も食べたことがなかったんだ

So this is it this is what I've been waiting for, for 3 years.

僕が3年間待ちわびていた瞬間が まさに、ついに訪れるんだ。

We're eating the beef tomorrow, so today we're going to a Ryokan?

明日は米沢牛を食べるんだ。 今日は旅館に行くよ。

A traditional Japanese inn.

旅館は伝統的な日本の宿のことだね。

Why this ryokan? Why did we choose this one?

その旅館を選んだ理由は何？

Ok so, when I sort it on the website I saw this really great outside bath with a waterfall.

ネットで検索しているときに 滝のある素晴らしい露天風呂を見つけたんだ。

Ah like at onsen?

温泉みたいな？

That's right.

そうだよ。

And with the snow I think it'l look very nice.

露天風呂から見る雪景色は 素晴らしいものだと思うよ。

So we've got an onsen -a hot spring,

温泉に、

a ryokan - a traditional Japanese inn

伝統的な宿「旅館」

and Yonezawa beef.

それに米沢牛

Before checking in we first decided to explore the local town, famous for it's hot springs

チェックインする前に、 まず温泉で有名な町を観光することにした。

after the ryokan gave us both some stylish silver coats.

旅館の方がおしゃれなシルバーの コートを親切にも貸してくれた。

It's a hot spring actually - a natural hot spring that you can drink.

これは温泉だよ。 この温泉は飲めるんだ。

It is quite hot.

It's 72 degrees.

Is it quite sulphuric?

硫黄の匂いする。

It is and it's salty actually. I tried it. So I think you should as well.

そうでしょ。それにしょっぱいんだ。 僕も飲んだから、クリスも飲んでみてよ。

How much do you drink?

どのくらい飲むの？

Well, just a little bit. I don't know

うーん、少しだけだよ。

- as much as you want. It's good for your blood circulation.

でも好きなだけ飲むといいよ。 血行に良いんだって。

-Oh my god it smells like a rotten egg. -Just try it. Just sip…

Drinking seawater that smells like rotten eggs.

That's true.

No actually she's soaking eggs.

違うよ、 卵を浸しているんだよ。

She's soaking eggs.

あ〜浸しているのか。

Actually they soak eggs in the hot spring for, I think 10 minutes or something.

温泉に卵を10分くらいつけるんだ。

10 minutes.

10分ね。

Yeah, so that it gets half soft, half boiled. And you put some soy sauce on the top and you can eat it.

そうすると卵が半熟状態になるんだ。 それに醤油をたらして食べるんだよ。

So you can eat it?

食べれるの？

Yeah you can eat it.

うん、食べれるよ。

We'll get to eat it tomorrow morning actually.

実は明日の朝食べるよ。

So here are some eggs that are being boiled now…presumably.

今、卵が茹でられている。

-So how long will they be there? For 12 minutes? -12 minutes.

-これはどれくらい温泉につけるの？12分？ -そう、12分だ。

So who's eggs are they?

これは誰の卵なの？

I don't know.

They've just left them there.

They're pretty confident.

I mean this shows just how safe it is.

you can leave your eggs boiling in some water down the street, and no-one will ever come and take them.

You couldn't do that in the UK.

You couldn't leave your eggs boiling in the water down the street. They'd be gone in 25 seconds.

Well it actually happens a lot actually. I had it once.

実際よく落ちてくるんだ。 一回僕も経験がある。

It just came off on to my head.

I didn't die. I'm a strong guy you know.

After exploring the town and it's delicious mineral water,

町を散策して、 美味しいミネラルウォーターを味わった後に、

we headed back to the ryokan to check into our rooms, before entering the hot spring.

僕たちは旅館に戻ってきて、 温泉に入る前に部屋にチェックインした。

So the thing I love about ryokans is the rooms are just so peaceful and relaxing.

旅館の好きなところは 部屋がとても心地良くリラックス出来ることだ。

You can see why Japanese families come here to relax.

まるで古き良き時代に戻ったみたいな感覚に陥る。

In many ways you do feel like you've gone back in time - with the exception of the Panasonic television and a few other items.

PanasonicのTVと その他のいくつかのアイテムは例外として。

And I find it a really great place to just disconnect from the outside world and just relax and unwind

日々の忙しい生活を忘れて、 リラックス出来る素晴らしい空間だと思う。

With the view of the snow coming down outside,

窓からは降り積もる雪が見え、

it all comes to together to create just this, really peaceful, wonderful atmosphere.

素晴らしく心地よく 心安らぐ空間を作り出している。

With the exception of the snow coming off of the roof like that.

屋根からあんな風に雪が落ちるのは別として。

When you coming into a ryokan room, then you're going to have this.

旅館の部屋に入ると必ず浴衣がある。

This is a Yukata.

着物みたいなものという人もいるけど

Some people say its like a kimono.

着物はもっと分厚く色とりどりだ。

But a kimono is like a really thick and colourful.

お祝いの機会なんかに着るんだ。

The one that we would wear to celebrate something.

でも旅館で着る浴衣は とっても薄くて軽いんだ。

But in ryokan we call this a Yukawa - it's really thin.

それから

What else…

他には、この大きなタオルがあるね。

okay. You've got this big towel.

カバンの中には小さなタオルが入ってる。

And then in the bag with a small towel inside.

大きなタオルはお風呂から出たあとに、 身体を拭くためにあるんだ。

Big towel, is to wipe your body off after you get out of the bath.

小さなタオルはお風呂の中に持って入るんだよ。

Small towel is the one you take in.

"謙虚になる"タオルだね。

Modesty towel!

そうだね。(笑)

Sure. Modesty towel

お風呂の中に持って入って 身体のプライベートな箇所を隠すんだ

you cover the private parts of the body. So you can take this into the bath.

でも一つやってはいけないのは、 タオルをお湯の中につけることだ

But one thing you must not do is - please do not soak this one into the water.

どうするかと言うと、

So what you do,

お湯に浸かってるときは頭の上に乗せるんだよ。

what you do while you're in the bath - you put your towel, on your head.

Only problem with Yukata is it really does make your stomach stick out.

What a way to enter an onsen.

You have to put you underwear into this.

So we have to take our clothes off, so over.

何にも着てないから、 皆に全てを見せることはできないんだけど、

I can't actually show you much, because we're not wearing anything.

休憩が必要なときは、 椅子に座ることも出来る。

But this is what an outdoor onsen looks like.

You've got a bench there for when you need a bit of time out.

これぞまさに 僕が日本を愛する理由だ

今は1月だからすごく寒い。

This is the reason this is like my favourite thing in Japan.

雪が降っているし まだお湯に浸かってないからね。

It's so cold! Right now, it's January,

it's snowing and we're still not in the bath!

温泉でリラックスした後 個室のダイニングルームでご馳走を頂いたんだ

The waterfalls, the snow…

河鹿荘のオーナーの佐藤さんが用意してくれたんだ

I know! It was perfect.

After relaxing in the onsen, we headed over to our private dining room for an incredible feast,

米沢牛だ

which would be hosted by the owner of the Kajikaso Ryokan, Mr Satou.

この美しい見た目、素晴らしいな

Look at that. Fantastic.

ああ。

The meat! It's Yonezawa beef

これが本当の贅沢だ。 しかも外は美しい雪景色だ

Look at the presentation absolutely amazing.

本当に夜ごはんは素晴らしかった

Yeah!

夜ごはんと呼ぶには軽すぎる… 本当に貴重な体験だったよ

This is what it's all about. And the beautiful snowy scene outside.

小皿がたくさんあり、 本当に見た目が美しい

Had such an amazing dinner this evening.

日本酒もたっぷりとあった。

To call it a dinner wouldn't seem right. It felt more like an experience.

旅館での食事の素晴らしい点は そのゆったりとしたペースだ

What with all the little dishes, the amazing, beautiful presentation.

心地よく食事が進むから お腹がいっぱいになりすぎることはない

The copious amounts of sake.

しゃぶしゃぶは日本料理のひとつで、 薄くスライスされた牛肉をお湯の中にくぐらすんだ

And i think the best thing about eating at a ryokan like that is the pacing of the meal.

「しゃぶしゃぶ」はお湯にお肉をくぐらす行為を 音で表した擬態語だ。

It's very nicely paced out, so you never feel stuffed. You never feel too full.

ポン酢につけて食べる

Shabu-shabu is a Japanese dish where thinly sliced beef is boiled in hot water.

味は抜群に美味しい。

The term shabby shabu is an onomatopoeia, derived from the sound emitted when the beef is stirred through the boiling water.

良い匂いだ。

And before eating it you dip it into a vinegar soy sauce.

美味しい？

And it tastes incredible.

美味しい！ 最高に美味しい！

Smells good!

この牛肉は日本酒と合わせると最高なんだ

Very good?

なるほど！

Very good! Very very good.

日本酒は最高にうまいですよ

And, this beef, drink with Nihonshu (sake). It's very nice.

僕もそう思います

佐藤さんは本当に素晴らしい方で 彼のおかげで食事は最高の時間だった。

Nihonshu (sake) is very good.

彼が僕に日本酒をたんと恵んでくれたから 言ってるのかもしれない。笑

Best of all we were joined by the owner Mr Satou, who's such a really nice guy.

牛肉と日本酒は 最高のコンビネーションですね。

Maybe I'm saying that because he gave me copious amounts of sake.

Or maybe I'm saying that because he genuinely is a really nice guy.

Ah beef and sake - good combination.

It's very fruity!

でも日本酒なんだよ。

Yeah!

本当に素晴らしい。 極上のおもてなしだ。

But it's Nihonshu(sake).

最高レベルだね。

So nice. Such great hospitality!

次の日に佐藤さんの計らいで 米沢牛が食べられるレストランに昼食に行った

Yeah!

しかも、牛肉の下準備をする裏側を 見せてもらえることになったんだ

Top notch.

まじめな仕事のときは これを着ないといけないんだ

The next day Mr Satou generously arranged for us to go for lunch at a nearby famous Yonezawa beef restaurant,

and even got us access to seeing the beef being prepared behind the scenes.

日本の和牛はその霜降りで有名だ

Yeah. It's like a rapper.

牛に脂がのっている証拠だね。

米沢牛の特徴はその脂だ。 他の牛肉に比べてすごく柔らかい。

Japanese beef or wagyu as it's known in Japanese, is famous for it's marbling,

だから、低い温度でも溶け出すんだ。 だから室内は常に低温を保たないといけない。

whereby the beef contains a high amount of fat.

なるほど。

The uniqueness of Yonezawa beef is that the fat, compared to other beef is very soft.

ああ、触っただけですぐ溶け出したよ。

Even at a lower temperature, it starts melting. So we need to keep the room very cool.

本当だ。

Okay

わあ!

It melts! When you touch it, it starts melting.

アイスクリームみたいだね。

Oh yeah.

脂の融点が低いおかげで、口の中で牛肉がとろけ、 濃厚で深みのある味わいを生み出す。

wow!

最も、味わい深く、ジューシーなステーキが できるのはそのおかげなんだ。

It's like ice cream.

ステーキ好きな僕は この牛肉を食べたら

Due to the fat's low melting point, it means the steak quit literally melts in the mouth and has an incredibly rich, almost buttery flavour,

もう、今後普通の牛肉を食べても 美味しいと思わないだろうと思った。

creating one of the richest, juiciest steaks in the world.

素晴らしい霜降りを作り出すには 徹底的にハイグレインの餌を与え

As someone who absolutely loves steak , I can tell you now, once you've tried it,

最高の状態の牛を育てる。

regular steak will never, ever, taste as good again.

普通の牛は15ヶ月ほどだが、 米沢牛は36ヶ月もかけて育てられるんだ。

To produce the marbling effect, the beef comes from the finest cattle,

この徹底した期間や品質管理が、 最も美味しく高級な和牛を生み出すんだ。

which are fed an intensive high grain diet.

クリス、彼も霜降りだよ

Whilst regular cattle are slaughter around 15 months, wagyu cattle are raised until 36 months.

And this obsessive and length process of quality control, leads to some of the best tasting, and most expensive beef on the planet.

米沢牛の説明が書いてある。 米沢牛が特別な理由だ。

It's marbling!

農場の人は地元の人であること。

つまり、牛は地元で 生まれ育てられているということだ。

This is the definition of Yonezawa beef, what makes Yonezawa beef so special.

ここで育った牛ってことだね。

The farmers need to be local people, meaning the cows are from local and grown here.

そうだ。

Ok so local cows.

そして、これがすごく重要だ。 牛はメスでないといけない。

That's right.

なんで？

Also this is quite important. It has to be the female cow.

しかも、処女でないといけないみたいだ。 って書いてあるんだ。

Why?

オス牛は大きくなりすぎるんだ。 そして、メス牛の肉のほうが美味しい。

She needs to be a virgin actually. It say here…

そうなの？メスで出産したことない牛だね。

The male cow gets too big, and the female cows taste finer.

その通り。

Really? So only female cows that haven't given birth?

That's right yeah.
