この"Cooking with Dog"の司会をやっています
First, dissolve the salt in a bowl of water,
分量の水に塩を加え
making 3 percent salinity equal to seawater.
海水程度の食塩水を作ります
Place a mesh strainer in a tray
トレーにザルをセットし
and distribute the asari clams into it.
貝を並べ
Pour the salt water over the clams until almost covered.
塩水をひたひたになるまで注ぎます
Cover to avoid letting any light in the tray
光が入らないようにカバーをかぶせ
and let it sit for 2 to 3 hours.
2〜3時間おきます
Now, let’s remove the cover.
カバーを外します

A dark place helps the clams to spit out the sand
暗くしておくとアサリは砂を吐きます
and the mesh strainer avoids allowing the sand in again.
ザルは 一度吐き出した砂を再び吸い込まないようにするためです
Place the clams into a bowl
ボールに入れ
and add water.
水を注ぎます
Then, thoroughly rinse the clams,

scrubbing the shells against each other.

Place the clams into another bowl.

Add water again.

Scrub the shells against each other,

rinsing the clams thoroughly.

Finally, rinse them under running water
最後は流水ですすぎ
and then place onto a plate.

Now, let’s cook the clams.
アサリを煮ます
Place the clams into a pot
鍋に入れ
and pour water over them
ひたひたの水を加えます
until they’re almost covered.

Cover with a lid.

Then, turn on the burner.
火をつけます
Cooking the clams gradually will help to make the savory dashi stock.
水からゆっくり煮るとアサリの良い出しが出ます
When the clams begin to open, uncover.
殻が開き始めたら蓋を開け
Remove the clams with tongs as soon as the shells are open.
開いた順からトングで取り出します
This will help to avoid overcooking.
アサリに火が通り過ぎないようにするためです
Remove all the clams
全て取り出したら
and turn off the burner.
火を消し
Ladle out the foam from the broth.
アクをすくい取ります
Then, strain the clam broth with a paper towel,
茹で汁はキッチンペーパーでこし
removing the sand completely.
砂や汚れを完全に取り除きます
Now, remove the clams from the shells.
アサリの身を殻から外しましょう
Using a spoon, scrape off the connecting muscles
スプーンで貝柱をこすると
so that the meat can be removed easily.

Pour some clam broth over the meat.
身は 茹で汁の一部をかけておきます
This will keep the clams from drying
汁に浸しておくと 乾燥しない上に
and also help them absorb the savory broth.
茹で汁の旨みも吸ってくれます
Let’s cut the vegetables.
野菜を切ります
Slice the long green onion into 5 millimeter
長ねぎは5㎜幅の
or about a quarter inch slices using diagonal cuts.

Cut the carrot into thin slices
人参は薄くスライスし
and then slice into thin strips.
千切りにします
Cut the aburaage, thin deep-fried tofu in half
油揚げは幅を半分に切り
and slice into thin strips.

Remove the excess oil with a paper towel before slicing.
余分な油はキッチンペーパーで吸い取ってあります
And now, let’s make the fukagawameshi.
深川めしを作ります
First, add water to the clam broth
アサリの茹で汁に水を加えて
until it reaches 300ml or about one and a quarter cups.

Then, pour the broth into a pot.
鍋に注ぎます
Ladle the broth into a bowl of miso,
みそにだし汁をすくって加え
dissolve it with a balloon whisk
泡立て器で溶かし
and then add the diluted miso into the pot.
鍋に戻します
Add the sake,
酒
mirin,
みりん
sugar
砂糖
and the shredded ginger root.
生姜の千切りを加え
Add the carrot,

aburaage, thin deep-fried tofu
油揚げ
and the white part of the long green onion.
長ねぎの白い部分も加えます
Lightly stir the ingredients.
軽く混ぜます
Cover and bring it to a boil on medium heat.
蓋をして中火で熱します
When it begins to boil, reduce the heat to low
沸騰したら火を弱めて
and simmer for 2 to 3 minutes.
2~3分煮ます
Add the clams

and the green part of the long green onion.
ねぎの青い部分を加え
Bring it to a boil again
再び沸騰してアサリが温まったら
and then turn off the burner.
火を止めます
Now, place the fresh steamed rice into a bowl.
丼に温かいご飯をよそいます
Ladle the clams and vegetables onto the rice.
アサリと野菜をすくってご飯にのせ
Then, pour the clam miso broth over it.
みそ汁をたっぷり注ぎます
Top with the shredded nori seaweed.
焼き海苔を飾り
Finally, sprinkle on the shichimi, seven flavor chili powder to taste.
お好みで七味唐辛子を振りかけます
There are 2 types of fukagawameshi
深川めしは2種類あって
and today’s dish was originally made by the fishermen

in Fukagawa near Tokyo Bay.
東京湾に近い深川の漁師さんの料理です
Another fukagawameshi is a type of takikomi gohan,
もう一つは アサリのむき身を使った
where the rice is cooked along with the clam meat and seasonings.

Be careful not to overcook the clams
アサリは煮すぎると
to keep them from getting tough and shrinking.
