  • - Welcome to Cook with Susan, Konnichiwa!

  • Means good day to everyone in Japanese.

  • And today I'm going to be cooking

  • a Japanese dish called sukiyaki.

  • Okay, so I had great teachers that taught me.

  • It was my ex mother-in-law and father-in-law,

  • who were Japanese.

  • So, let's get started!

  • The first thing that we have is vegetables.

  • So, there's a whole array of vegetables here.

  • There's napa, shiitake mushrooms,

  • this is lotus flower root, this is bamboo shoots.

  • There are green onions, enoki mushrooms.

  • Enoki mushrooms, I think maybe you should

  • take a look at what it looks like.

  • It looks like this in a package,

  • and I bought all this stuff at Mitsuwa Market.

  • Then, I have here is konnyaku, which is a yam.

  • And it comes in a package that looks like this.

  • I have fish cake, which comes in a package like this.

  • And shirataki noodles, it comes in a package like this.

  • Okay, and we've got tofu here,

  • for our meats we've got sukiyaki beef,

  • it comes in a package, so you will note

  • that it says "sukiyaki beef".

  • We have shrimp here, this is something different,

  • it's called foo, F-O-O.

  • And they're like little breads

  • that soaks up all the juice and broth

  • that I'm going to be making today.

  • And it comes in a package that looks like this,

  • Okay?

  • A little, all different things going on here,

  • so I thought maybe I'd let you look

  • to see what it's all about.

  • And then, with this dish, we actually eat it with rice,

  • so I have rice in the back cooking.

  • Alright, so the utensils that we need is a electric skillet,

  • and a couple of slotted spoons like this,

  • and probably something like this

  • where you could pick up all the food

  • and things like that before you cook it.

  • So, now we're make the sauce, the broth

  • that we're going to cook all these wonderful things in.

  • So, the first thing we're going to have is soy sauce.

  • This is one cup of soy sauce.

  • I'm going to make one cup because we have five people today.

  • So, you could always halve the recipe,

  • and that would be good, too.

  • And then I put four tablespoons of sugar,

  • two cups of water,

  • and a half a cup of of mirin,

  • and a half a cup more sugar, actually I'm going to wait.

  • I'm going to wait to taste it, because if

  • it doesn't taste like, if it's too sweet

  • it's not going to be good.

  • So, let me get a spoon here and I'm going to go like this,

  • (liquid stirring)

  • just, swirl it around and I'm just going

  • to take a quick taste to see how salty it is.

  • Okay, tastes pretty good.

  • What I'm going to do is add a little bit more water,

  • just a teeny bit more water.

  • I'll put about a half cup more.

  • And I am going to put the sugar in.

  • There we go.

  • (stirring liquid)

  • I'm going to taste that real quick.

  • Perfect.

  • So, what we do is we actually put it now into the skillet.

  • (liquid pouring)

  • We're going to turn on the skillet.

  • So, now what we do is just wait 'til it

  • sort of bubbles a little bit.

  • And then what we do is we put the vegetables

  • and the meats and the yams, tofu

  • and we just go ahead and put it in the pot

  • there, in the skillet and we put it

  • on top of the table and we watch it cook.

  • And, eat when it's done.

  • Okay, so now we're going to start putting

  • the vegetables into the pot, probably put

  • the ones that's going to cook the longest,

  • so I'm going to put the lotus root first.

  • So, these are going to take a little bit of time.

  • So, I'm just going to put all of them in here like that.

  • And, probably put these bamboo shoots in there, too.

  • Let's do that.

  • Okay, and, I'm going to switch over and get the tofu.

  • (cheerful music)

  • One thing that Japanese do, is

  • they put, actually break an egg in a cup

  • - [Man] Okay. - [Woman] Mm-hmm.

  • - And they stir it up, just like what Tiffany's doing there.

  • - [Man] Okay.

  • - Yes, okay, and then you start adding

  • whatever you want.

  • So, what would you like, sweetie?

  • You probably want the beef again.

  • - [Man] Yeah.

  • - And you probably want a little bit of tofu,

  • put a little tofu in there.

  • - [Man] I will.

  • - Probably a little bit of fah, foo, excuse me.

  • And a little bit of the, as you can see,

  • - [Woman] That looks awesome.

  • - the egg actually gets cooked because you're putting

  • this really hot soup in there.

  • So, it's not like you're eating a raw egg.

  • - [Man] That's good, perfect, thank you.

  • - There you go!

  • - [Man] Wow!

  • This is kobe beef, I got a little bit of sauce

  • in here on my rice and I'm going to try the beef.

  • And,

  • see how this tastes.

  • (voices mumbling)

  • - What, it's a little sweet.

  • What is that from?

  • - There's sugar in there.

  • I added a little more sugar.

  • - It's like the perfect amount of sweetness.

  • - Do you like? Okay, good.

  • - No, I meant that having you, Tiffany

  • and April around.

  • (laughing)
