If you don't have guanciale, you can use pancetta or bacon. It's okay, if you don't have this you can even use prosciutto. It's alright, it's pork. Now, to make this Spaghetti alla Carbonara, we have over here; a little olive oil it, not too much oil, because the guanciale is already greasy. I have black pepper, pecorino cheese, eggs. Use one whole egg and one just the yolk. I got over here 8 ounces of spaghetti. Now, to start, I add a little oil into the pot, but not too much oil. Like I said, because the pancetta is greasy. Not the pancetta, the guanciale. That's it. Okay, let's put the gas on. I want to warm up the oil, really good. When I put in the guanciale, it will make it fry nicely right away. The oil is warmed up, so now we add the guanciale. Right over here. Okay, we stir this and now it's almost ready. Now we cook the pasta. The pasta, the spaghetti needs about 8 minutes. I added salt already to the water. The water is boiling so let's dump it in. Make sure to turn the pasta around like this. Like this it won't stick together. This will take like 8 minutes to cook the spaghetti. The pasta is cooking. In the meantime, I will prepare the eggs. I need black pepper. I need pecorino cheese. Now we scramble it together. The pasta is ready. Now the guanciale I removed from the heat because it shouldn't be too hot for the next step. If it's too hot when you add the eggs, it will make a frittata. It will make scrambled eggs. This allows the pot to cool down. Now we take the pasta and the pasta is hot. Add the pasta like this. If the pasta still has a little water, don't worry about it. But not too much! It can be just a little bit of water. Like this. Now we give it a stir. Okay, now it's time to add the eggs inside. We put it right over here. Make sure to stir it right away. Alright. Okay it looks so good and now it's time for me to eat this. This is all for me, one big spoon. Okay now let's put it in a dish. Pecorino cheese is so good. But you know what? This is too small for me. I need a lot of cheese over here. Lets use this one. You think I have enough of this? Look at this, beautiful. Okay, let me taste. My pasta, ohhh so good! The guanciale and the pecorino cheese it tastes really really good! And I'll tell you the truth, today, I want to enjoy this all by myself. And I want to get a nice glass wine too! MMmmm!
