Come on in to our humble abode.

So, this is what it looks like right now.

We are nearing the opening.

Obviously, there's a lot of finishing touches have to be done.

But, what used to be just a cold marble floor is now this beautiful kitchen.

As told in the previous video, we have this amazing, beautiful, natural light coming in.

And the stove is here, range from Korea.

We have a little refrigeration unit underneath here so that during service or when I'm cooking, there's a fridge so that we can take things out on the go.

この下には小さな冷蔵ユニットがあり、サービス中や私が料理をしているときに冷蔵庫があるので、外出先でも物を取り出すことができる。

We chose wooden slabs to decorate the kitchen because we wanted to give a warm feeling.

キッチンの装飾に木の板を選んだのは、温かみを出したかったからだ。

I wanted it to feel like you're stepping into my home and you're a guest that's invited in.

私の家に一歩足を踏み入れたような、招かれた客のような感覚になってほしかった。

Even the structure of this kitchen is quite homey and very different from commercial kitchens.

この厨房の構造でさえ、家庭的で、商業的な厨房とはまったく異なっている。

And we like that.

それが気に入っている。

And I think it's what makes this place even more special.

そして、それがこの場所をさらに特別なものにしているのだと思う。

This is kind of like a Frankenstein of IKEA units and also made-to-order units.

これはIKEAのユニットとオーダーメイドのユニットのフランケンシュタインのようなものだ。

So, this tabletop, I don't know if some of you might notice, but it's a wooden slab from IKEA.

このテーブルの天板、お気づきの方もいらっしゃるかもしれませんが、IKEAで買った木の板なんです。

The reason why we used a lot of IKEA, number one, it's very cost-efficient.

IKEAを多用した理由は、第一にコストパフォーマンスが高いこと。

Number two, it's very sturdy.

その2、とても頑丈だ。

And it's a really great way to build the building blocks or the bones of the structure and also be able to customize it.

そして、ブロックや構造の骨組みを作り、それをカスタマイズすることができる本当に素晴らしい方法だ。

And yeah, the IKEA modules, beautiful stainless steel so that it's easy.

そうそう、IKEAのモジュールは、美しいステンレス製だから簡単なんだ。

And in front of me now, these are plates that we have right in front of us.

そして今、目の前にあるのがこの皿だ。

They're all made in Korea and they mean a lot to us.

それらはすべて韓国製で、私たちにとって大きな意味を持つ。

It's really been such a great experience being able to work with a lot of the local artisans and some of the Korean potters.

多くの地元の職人や韓国の陶芸家たちと一緒に仕事ができたことは、本当に素晴らしい経験だった。

And some of them are actually secondhand as well and we got a really, really great deal for it.

So, this was $2.

And I really like that we've been able to incorporate a lot of secondhand items because they have history as well as for sustainability.

In that sense, I think I'm really happy about a lot of the finds that we got.

そういう意味では、多くの収穫を得ることができて本当に良かったと思う。

We kind of mapped out all those plates for what dishes are going to be put in so that we can visualize it better.

どの皿にどんな料理が入るのか、イメージしやすいようにすべての皿をマッピングしたんだ。

It is going to be omakase or a course menu.

おまかせかコースメニューになるだろう。

Why?

なぜですか？

Because we have a very, very limited space.

私たちのスペースはとても限られているからね。

And in order to reduce the amount of waste and space, having a curated menu and being able to book in advance was the idea that we came up with in order to really make this come to life.

そして、無駄を省き、スペースを減らすために、厳選されたメニューを用意し、事前に予約できるようにすることが、これを実現するために私たちが思いついたアイデアだった。

The thing with a la carte restaurants, which is, you know, you order off the menu, we can never estimate how much food of one kind we need.

アラカルト・レストランはメニューから注文するものだから、一種類の食べ物がどれだけ必要なのか見当がつかない。

And in order to tell the story and some of the mission that we want to achieve, we felt that it was best to have the curated menu.

そして、私たちが達成したいストーリーとミッションの一部を伝えるためには、キュレーションメニューを用意するのがベストだと考えた。

And you'll see that in a couple of days.

I want you to come on up, but I'm going to ask you to take your shoes off because this is a Korean household.

上がってきてほしいが、ここは韓国の家庭だから靴を脱いでほしい。

And this is our little shoe rack, which all the guests are going to be putting their shoes in.

そして、これは小さなシューズラックで、ゲスト全員が靴を入れることになっている。

So this is the dining space.

ここがダイニングスペースだ。

We have a total maximum capacity of 18 people.

最大収容人数は18名です。

That is maximum, maximum capacity.

それが最大、最大能力だ。

But what is cool about these tables is that they can actually like this extend out.

しかし、これらのテーブルのクールなところは、実際にこのように伸ばすことができることだ。

So if we are hosting events or, you know, there's more people who want to join us, we'll be able to extend it out or even just do one gigantic table like this in a communal table for any festivities.

だから、イベントを開催するときや、参加したい人が増えたら、このテーブルを広げることもできるし、お祭りのときには、このように巨大なテーブルを1つ、共同テーブルにすることもできる。

This is kind of the waiter section.

ここはウェイターのセクションのようなものだ。

There is a little hidden kitchen also in here.

ここにはちょっとした隠しキッチンもある。

Not a kitchen, but like a washing area for dirty plates and so on.

キッチンではなく、汚れた皿などを洗う洗い場のようなものだ。

Dirty plates are going to go here, get loaded up and then in it goes like this.

汚れた皿はここに入れられ、積み込まれる。

And the additional storage units as well as wine racks or wine glasses and for little makgeolli cups.

さらに、ワインラックやワイングラス、小さなマッコリカップ用の収納ユニットもある。

So cute.

とてもキュートだ。

This one also I got for 70 cents.

これも70セントで買った。

Isn't that crazy?

Somebody just threw these out like these are beautiful, beautiful glasses.

美しい、美しいグラスだ。

For now, this is not a finished project.

今のところ、これは完成したプロジェクトではない。

My dream is to put all the jars here and just fill it with cool preserves so that some of the things that you guys are eating or maybe for the next season are displayed here.

私の夢は、すべての瓶をここに置いて、クールな保存食でいっぱいにすることだ。

So when I first made the video, I asked you guys what kind of table fare it should be, and there were a lot of mixed responses.

And I really like the idea of sitting down on the floor because it's a very quintessentially Korean experience, especially with all the ondol, so all these floors are heated.

We do have to get some cushions because it is a bit high.

ちょっと高さがあるので、クッションを用意しなければならない。

This will be a four top, so four people sharing food.

And I really like this doorknob because it's Korean traditional pea jar feeling like the ceramic for it.

そして、このドアノブは韓国の伝統的なエンドウ豆の壷のような陶器で、とても気に入っている。

It was a nice little cute touch.

ちょっとキュートな感じでよかった。

Anyways, to the bathroom.

とにかく、トイレへ。

Still very small.

まだとても小さい。

I didn't think that I would be fixing the bathroom much when I first started, but I like kind of flashy bathrooms, so chocolate tiles, mirror.

最初の頃は、あまりバスルームを直すことはないと思っていたんだけど、私はちょっと派手なバスルームが好きだから、チョコレートのタイル、鏡。

And we kind of changed the dimension of the sink.

そして、シンクの寸法を変えたんだ。

The sink used to be here, but that's what made the bathroom so, so small.

以前はシンクがここにあったが、そのせいでバスルームがとても狭くなってしまった。

So we put it here in the back.

だから、この奥に置いたんだ。

It's a tiny, tiny basinette, but it does the trick.

小さな、小さなバスクリンだが、これで十分だ。

And it also gives some room for extra storage.

さらに収納スペースも確保されている。

Storage units here, so that any like toiletries or cleaning products, all of it can be here.

ここに収納庫があるので、洗面用具や掃除用具など、すべてここに置くことができる。

Kevin actually built this himself, so there's a bit of a human touch to it.

It's one of my favorite rooms here.

Unfortunately, I was tempted to keep the kept going side, but we painted it.

We have some chili peppers, some lettuce, some little seedlings that we're hoping to grow.

We have this LED panel just so that, you know, we can boost these little seedlings to grow even stronger.

And they're doing well.

We have water here so that we can germinate and feed some water for the little plants.

And this is my little safe haven area.

Yeah, it's a nice place to have a cup of tea and just relax.

So there's two Kevins, Big Kevin, Small Kevin, me, and then Yejin.

So we have little individual buckets for each person.

And Yejin organized these and it's very cute.

For now, it does the trick.

And we have this little candle that a graphic designer friend of mine gifted.

Definitely really nice to be able to have a place where everyone can come in, work together.

And I even have a calendar and I'm very proud of myself for it I used to just do shit sporadically and freak other people out.

I still do, but I'm trying my best to be a bit more organized.

Oh, before we move on to the terrace, we built a little mini garden here with mints, some chives, some squash and peas and tomatoes.

そうそう、テラスに移る前に、ミントやニラ、カボチャ、エンドウ豆、トマトを植えて小さなミニガーデンを作ったんだ。

Right now they're growing and peas and tomatoes like vine plants.

今はエンドウ豆とトマトをつる性植物のように育てている。

They need something to latch on to and kind of grow up.

彼らは何かにしがみついて、成長する必要がある。

So we're hoping that with some time and love and sun, they're going to start climbing up and make this beautiful like vine wall.

But right now it's a baby stage and it looks a little depressing with no sunlight right now.

We built all these baby plants and we have some chili peppers, some flowers.

I love gardening, and this is a love that Kevin taught me.

私はガーデニングが大好きで、これはケビンが教えてくれた愛情なんだ。

And it's been an incredible experience.

信じられないような経験だった。

Planting, we felt that it was really important to have fresh local produce that we grew ourselves, that served in the restaurant.

私たちは、自分たちで育てた新鮮な地元の農産物をレストランで提供することが本当に重要だと感じていた。

And it was something that I think in order to be a real foodie, quote unquote, you need to learn about the ingredients and how it's grown.

本物の食通になるためには、食材や栽培方法について学ぶ必要がある。

And we kind of wanted to create like a full circle restaurant where we provide the ingredients, cook with it, serve it.

そして、食材を提供し、それを使って調理し、提供するという、フルサークル・レストランのようなものを作りたかったんだ。

And then some of the food waste, hopefully not a lot, because we've created measures to make sure that not a lot of food gets wasted.

そして、食品廃棄の一部、できれば多くはないことを祈りますが、私たちは食品をあまり無駄にしないような対策を立てています。

But if we do, it's going to get composted and then put back into the soil and be able to grow for the next season, for the next year.

でも、そうすれば堆肥化され、土に戻され、次のシーズン、次の年に生育することができる。

And we felt that having this garden was an important way to make our mark in having a little food ecosystem here in Itaewon.

そして、この庭を持つことは、ここ梨泰院に小さな食の生態系を持つという意味で、私たちの足跡を残す重要な方法だと思った。

I can really see myself just suntanning here during the summer, pushing both Kevin Small and Kevin Large out and just fully naked here.
