And today we're making celebratory ice cream sandwiches, which are perfect for all different types of special occasions. - Like me friend Elmo's birthday party! Yeah yeah yeah! - But Cookie Monster, shh! Elmo doesn't know. Oh, wait. Here he comes! Hide hide! - Hide hide hide hide! - Chef Joel! It's Elmo's birthday. Where are they? That's weird. - He gone. - That was close. - That was close one. - All right, let's get baking. - Yeah, yeah, yeah. Bake along with us! - Yes. And the first step, we've got to make our cookies. - Yes, we go, whoa! Did you say cookies? - I did. - Cookies? - Yeah, but it's for Elmo. Remember that. - Sure it is not me birthday? - I'm positive. - Okay, let's make some cookies! - All right, Cookie. So now we're gonna make our cookie dough. We need two teams. We have a dry team and we have a wet team. So you're gonna help me with both, okay? - Okay, yeah. - So first step for the dry team, we're gonna add some whole wheat flour. - Yeah. - Yeah. A little bit of salt. - Right. - Cinnamon. I love cinnamon. - Cinnamon. - Cinnamon. - Cinnamon. - I like cinnamon. - And then, baking powder. All right? And then will you mix that up for me, Cookie? - Me got it. - You got it? - You could take five. (Joel chuckles) (Cookie vocalizing) - So I've got some fat free milk. I have some honey. So good. Makes it nice and sweet and sticky. And then I have a little bit of vegetable oil and vanilla bean. And can you crack me an egg in here, Cookie? - Of course me crack egg. - All right. Awesome. Hey Cookie. - Yeah? - How do you make an egg crack up? - How? - You tell it a funny yoke. - Ah! - See what I did there? (Joel laughing) - Me no get it. (Joel laughs) - We're gonna combine these two. So I'm gonna get into the cookie dough. - You're gonna do this. - And I'm gonna squeeze it, yes! - [Cookie Monster] Oh yeah. - But this is gonna make it really nice and pliable so we can roll it out. - Oh yeah. - To be big sheet pan cookies. Look at this. - How big these cookies gonna be? - They're gonna be pretty big. I split the dough into two. - Like this. - Yes, not that big. Maybe half. - Like this? - Yes. - Like this? - Like this. - Or this? - [Joel] Can you eat that much, Cookie? - You really ask me that question. (Joel laughs) - Oh, hey, Cookie. If you roll it out on there, it won't stick to the counter. Yeah, yeah yeah yeah. So now we're gonna top that with another piece of parchment. - Okay. - All right. And then we roll these guys out. - Rolling, rolling. - Rolling, rolling, rolling. - Rolling cookie doughin'. - [Joel] Oh, Cookie, that looks so good! - Yeah, me got this. - Okay, I'm gonna bake these for 25 to 30 minutes. - Terrific. What we gonna do while we wait? - Let's decorate for Elmo's birthday. - Me love it. - All right, I'll be right back. (playful music) (bell dings) (chimes shimmer) - Yeah, Look at this. - This looks amazing. - It look terrific. Elmo gonna be so surprised! - Elmo is going to love this. And while our cookies are baking, this is a perfect time to make the filling. - Okay. - So I grabbed some ice cream out of the freezer, Cookie, and I kind of let it get a little melty. - It just a little softer. - Yeah. And then I thought Elmo would really like the colors if we put in natural sprinkles. So do you want to add some sprinkles to the ice cream? - Okay. One, two. - Cookie Monster! - How many we put in? Three. - At this rate, we're not gonna even get to his next birthday. - Four. - We got to dump the whole thing in Cookie. - Five. - I got it. All right, I'm gonna add in. - Six, seven, eight, nine, 10, 11, 12, 13, 14, 15, 15! Oh yeah, look! - And then we're just going to fold it in, you see? - Like a party in a bowl. - It's a party in a bowl and Elmo is gonna love the colors. Don't you think? - Yeah, it pretty. - It's so pretty. - It's like a celebration. - Look at this. (beeper dinging) - There's the cookies! - Cookies! Cookies ready, cookies ready! - Cookie Monster, you've been so good. You go put this in the freezer and I'm gonna go grab the cookies. - Okay. - We let the cookies cool, which is fantastic. Let's take little bit of this ice cream, put it on top. So I'm gonna spread it and I gave you some strawberries. You're gonna top the ice cream with those strawberries. All right? And you'll notice that the ice cream is just that perfectly soft. Right? See how spreadable that is? - Yeah, that look delicious. - And I take the, this is called an offset spatula. - An offset spatula. - Yeah yeah yeah. - As opposed to an onset spatula. - Yeah, exactly. - Tell me more. Om mm. - And I'm just gonna spread it all the way to the edge. - Yeah yeah spread away. - Mhmm. Nom nom nom. - And I'm gonna get it all the way right to the end of the cookie. - Yeah yeah okay. - And then I'm just gonna flatten it out. - Just like this. - Of course. You got to do that. - Yeah, you gotta do that. And then it's time for the. - Om nom. Yeah, time for what? - Where are the strawberries? - Strawberries? Oh, they're right in the bowl. - I see. Cookie Monster, did you eat all the strawberries? - Me not sure. - I've got some more strawberries. - [Cookie Monster] Oh terrific. - All right. No, no, no, no, no! I'm gonna top these right on top. I think I'm Elmo will love. - Oh, you know what, they for Elmo. Yeah yeah. - And then we just lay it right on top. - [Cookie Monster] Cookie sandwich. - And then back in the freezer. All right, Cookie Monster. So, our ice cream sandwich is frozen solid. - Yeah, me can feel how cold it is. - Isn't that so cool? - Yeah. So now we've gotta slice it up into kind of like two inch by two inch slices, all right. So I'm gonna move it to this cutting board. - Me got this. Here we go. Choppy chop chop chop chop. - Are you kidding? That is so cool, Cookie. You have to show me how to do that. (air whooshing) There's so many cookies here. We can have a whole crew of people over for Elmo's birthday. - Yeah, and me no eat cookie! - I am so proud of you. - Me proud of meself. - Amazing. You've been amazing. I think these look great. And we're so close to digging in. - We close. - Yes. - We not a hundred percent there yet. - What do you mean? - 'Cause we forgetting one important thing. - I followed the recipe to the T. It looks great. What's wrong with it? - Everything here for recipe, but we forgot birthday candle. - Oh, you're so smart, Cookie Monster. That is perfect! I'll stick it right in here.
