  • (chopping sounds)

  • (upbeat music)

  • - Hi everybody!

  • Today, let's make delicious party food with

  • beef short ribs!

  • Here you go.

  • The dish name is Cheese tteokgalbi.

  • Tteokgalbi.

  • Galbi means beef ribs.

  • And tteok, tteok is, you know that?

  • Rice cake!

  • So why it's called tteokgalbi, even though we don't

  • add tteok rice cake here?

  • Because the way of making this dish is

  • just like when I make rice cake.

  • Mince, and pound, and make a shape.

  • It looks like the way you make rice cake.

  • That's why it's called tteokgalbi.

  • I posted a traditional tteokgalbi recipe

  • a few years ago.

  • But today is a little modernized.

  • A simpler way, and adding

  • cheese!

  • Everybody loves cheese these days.

  • So gooey cheese, and sizzling tteokgalbi.

  • It will be a really delicious side dish.

  • First, I will just put this guy in the refrigerator.

  • And then, let's make marinade!

  • This is my food processor.

  • I will just grind all, everything

  • and make a puree.

  • Let's start with Korean pear!

  • Good looking pear, right?

  • I will add half.

  • And we gotta peel it.

  • (peeling sounds)

  • (slicing)

  • So core this way.

  • (slicing)

  • (slicing continues)

  • Pear vis ery juicy.

  • Onion, and ginger,

  • and garlic.

  • Onion, ginger, garlic.

  • (laughter)

  • It's a medium size, half of onion.

  • (slicing)

  • Make it chunks.

  • And garlic, eight cloves of garlic.

  • Ginger, around two teaspoon amount.

  • I just peeled it.

  • Peeled ginger.

  • (lid closing)

  • Let's puree!

  • (food processor whirring)

  • (lid opening)

  • (scraping)

  • (pouring)

  • I will use this food processor again when I mince

  • my meat.

  • Usually the the traditional way is to

  • mince with a real knife.

  • Really big knife.

  • I did it the traditional way, in my tteokgalbi recipe.

  • But today is just, let's make my life a little easier.

  • And then I will use this food processor.

  • But still, without a food processor, you can make it at home.

  • I will just add one tablespoon sugar.

  • And quarter cup soy sauce.

  • (pouring)

  • This is a dark soy sauce.

  • A little sweet.

  • Quarter cup.

  • Rice syrup.

  • So quarter cup.

  • (scraping)

  • (grinding)

  • And one teaspoon ground black pepper.

  • (shaking)

  • Ooh, last touch!

  • Sesame oil, two tablespoons.

  • (stirring)

  • And just mix.

  • Dark golden brown color.

  • Yummy, yummy liquid.

  • We made this.

  • (stirring)

  • So just stir this until all this is well incorporated.

  • I bought beef short ribs.

  • I needed two pounds of meat.

  • So this is two and half pounds, including bones.

  • So when I remove the bones, it will be around two pounds.

  • So if you use only ground beef,

  • just use two pounds.

  • (clanging)

  • Let's wash with cold water, nicely.

  • (water running)

  • (thumping noises)

  • (water pouring)

  • Drain the water.

  • I'm boiling water.

  • I have reason why I'm boiling.

  • You will see later.

  • (tapping)

  • (rustling)

  • And cut just the meat.

  • (slicing)

  • Wow, a lot amount.

  • (laughing)

  • We have bones like this.

  • Let's see.

  • (clanging)

  • It just start boiling, but it's okay.

  • (clanging)

  • Boil.

  • Put the meat into my food processor.

  • (plopping sounds)

  • (lid closing)

  • We are not going to grind really finely.

  • Because, just pretend we use a knife,

  • you know, mincing.

  • like the traditional way.

  • I use a pulse.

  • Pulse function.

  • And then until it's kind of coarsely ground.

  • (grinding)

  • That's it!

  • (shaking)

  • (tapping)

  • (stirring)

  • Just mix!

  • (stirring)

  • Look at this.

  • How juicy it is!

  • Amazing.

  • Okay!

  • Next, let's take care of my bones.

  • Bones are boiling here.

  • (water boiling)

  • (clanging)

  • Let's wash.

  • (water pouring)

  • (clanging)

  • (water running)

  • (splashing)

  • (clanging)

  • Okay, bones.

  • I'm going to use my grill pan.

  • And this is around 12 inch.

  • You guys can also use a pan,

  • just any skillet or a pan.

  • Anything so you can cook.

  • But it has to be oven safe, because I'm going to

  • use my oven to melt my cheese later.

  • (chopping)

  • Cheese and green onion.

  • Okay.

  • This is sesame oil.

  • Around one tablespoon.

  • Mix again.

  • (tapping)

  • (sizzling)

  • (scraping)

  • Spread this like that.

  • And evenly.

  • Nice, eh?

  • Nice, a huge size!

  • So this is just cooking, and also glazing.

  • And there is a lot of water inside.

  • So it's not going to be burned easily.

  • Next, I like to cut this, my mozzarella cheese.

  • (slicing)

  • (bubbling)

  • And around five minutes later, just with your spoon,

  • just mix it a little bit so that cooks evenly.

  • Like this.

  • (bubbling)

  • (tapping)

  • (chopping)

  • Just cut into small pieces.

  • (chopping)

  • So, I will just preheat my broiler.

  • (beeping)

  • (bubbling)

  • Very juicy.

  • So, I just cooked 10 minutes.

  • All this is well cooked, a little inside pinkish,

  • but you can eat it right now.

  • These bones.

  • Let's use bones.

  • Insert bones.

  • (bubbling)

  • So one pound mozzarella cheese.

  • I'll put this in the oven.

  • Broiler.

  • I preheated.

  • (oven door closing)

  • After melting my cheese, I'm going to,

  • use a Korean traditional way of decoration,

  • the garnish.

  • With sesame seeds, and chopped green onion.

  • And also this is shredded dried red pepper.

  • It's called silgochu.

  • Dried red pepper, sliced thinly.

  • Now, I'm waiting for my tteokgalbi cheese to be well melted.

  • (laughing)

  • (sizzling)

  • Yay!

  • Bubbly, bubbly cheese.

  • Turn off.

  • (beep)

  • (sizzling)

  • Green onion.

  • Silgochu.

  • Sesame seeds.

  • (lid closing)

  • (scooping)

  • (silverware tapping)

  • And you can scoop it up with spoon, and just eat with rice.

  • Rice and kimchi.

  • (blowing)

  • (slurping)

  • (pleased noises)

  • Mm, oh my, delicious!

  • Sweet, and juicy, and succulent!

  • Yummy!

  • (upbeat music) Make cheese tteokgalbi party

  • with your friends, and family.
