  • - Hey dudes, I'm Hilah, and today on Hilah Cooking

  • we are making a classic wedge salad with homemade

  • blue cheese dressing, bacon crumbles,

  • I'm gonna add some avocado on mine.

  • This is a great salad, it's like a really manly salad,

  • but at the same time, it's like refreshing,

  • like a lady's hair smells.

  • (upbeat music)

  • Okie dokie, so, wedge salad, uses everyone's

  • favorite lettuce, iceberg.

  • It's not really everyone's favorite,

  • it's every child's favorite, probably.

  • And I think this probably was invented in like,

  • steakhouses or something, I don't know,

  • so anyway, we're gonna take this head of lettuce,

  • and we're gonna cut it into wedges.

  • It rhymes, so that's how you can remember what to do.

  • I'm actually just gonna make two for now, so,

  • got that, and you wanna keep the core intact,

  • so that it stays in a nice little wedge shape.

  • And now I'm just gonna very gently rinse these

  • under some running water.

  • (water trickling)

  • So I just wanna shake these dry a little bit,

  • and then I'm gonna put each little wedge on a salad plate,

  • like so, and put it cut side down,

  • so more water can drain out.

  • And then I'm just gonna put these in the fridge

  • so they can get really nice and crispy

  • and they'll continue to drain and dry,

  • so they won't be all soggy.

  • That's kind of the key, cause you want your iceberg lettuce

  • to be like biting into an iceberg,

  • to just be cold and crunchy and refreshing.

  • So I'm gonna stick these in the fridge, be right back,

  • we'll make some homemade blue cheese dressing.

  • Okay, so, my dressing, I'm gonna start with some milk,

  • and sometimes wedge salads come with ranch,

  • but to me, blue cheese dressing is more traditional.

  • I don't know.

  • And, I've got some sour cream and some mayonnaise,

  • and some blue cheese, I need a tiny spatula, hang on.

  • Okay, so, put the sour cream in here first,

  • and this also, you can totally use this blue cheese dressing

  • recipe to make blue cheese dip, just reduce the amount

  • of milk that you use and it makes it thicker.

  • You want to whisk this together.

  • (gentle clinking)

  • Gonna add a little lemon juice,

  • to add a little bit of acidity,

  • you could use some white vinegar too.

  • There we go, kind of cool when you add the lemon

  • it thickens up immediately.

  • Add salt and pepper.

  • (loud grinding)

  • Probably should've used white pepper, but oh well.

  • And then, I'm using some blue cheese,

  • the one I'm using is pretty mild, but you can use Roquefort,

  • Gorgonzola, anything like that, just depending on how

  • much you like blue cheese flavor.

  • (gentle clinking)

  • Okay, so, this is ready, this will keep in the fridge

  • if you cover it, it'll keep a week, maybe 10 days even,

  • but I'm gonna go ahead and eat it now.

  • So I'm gonna grab my lettuce

  • and we'll assemble some wedge salads.

  • Okay, so here's my lettuce, my lechuga,

  • so if there's any water on the plate just dump that off

  • in the sink, don't need to be too crazy,

  • and then you set it upright like that,

  • and then you just want to spoon over

  • as much dressing as you want,

  • lots of chunks,

  • chunky blue cheese, there we go.

  • And I've got some bacon here that I cooked in the oven,

  • I made a video about that,

  • so I'll post a link so you can see how to cook

  • bacon in the oven, it's a really easy way to do it.

  • Lots of bacon, some cherry tomatoes, I like cherry tomatoes

  • cause they're a little sweeter than regular tomatoes

  • and it nicely offsets the foot smellingness

  • of the blue cheese.

  • Okay, then, my little addition,

  • since I live in California

  • now and they're cheap as shit,

  • I'm gonna add some avocado slices.

  • Right there, okay, and then I'm gonna add a lot more

  • black pepper, cause I like it.

  • Oh my god, I'm so excited, this is like one of my favorite

  • salads, it's so good, and I love that you need a fork

  • and a knife to eat this salad.

  • Of course you need a fork, you need a knife,

  • it's like, goes great with steak,

  • because you already have a knife in your hand, so.

  • Okay, here I go biting again.

  • Okay.

  • Mmm, mmm, mmm.

  • Oh I love this salad, I love this combination of flavors,

  • I hope that you try this, so good,

  • it inspired me to write this song.

  • You take a head of lettuce and you cut it into wedges

  • That's how you make a wedge salad

  • That doesn't really help you
