  • Hi everybody!

  • I'm in Portland, Maine

  • I'm staying in a hotel with a kitchen

  • I have been enjoying sea food a lot

  • I cook lobster, clams and shrimp

  • And all kinds of sea food

  • But one thing is missing

  • Kimchi!

  • I didn't bring my kimchi, so I found this bok choy in this grocery store

  • Easily you can find grocery store anywhere these days, bok choy

  • I will make some korean side dish using bok choy

  • Today's recipe is called Bok Choy Doenjang Muchim

  • Doenjang: soybean paste, that's it!

  • Soybean paste make it really really tasty

  • This is too large, so I am going to cut it in half

  • So there's some kind of yellow stuff here and then let's cut it off

  • This is all bite-size pieces

  • So now I'm boiling water and then I'm going to blanch this

  • Let's wait until our water is boiling

  • So this Bok Choy Doenjang Muchim is very, very easy and simple if we have some Korean soybean paste and hot pepper paste

  • I brought all the way

  • For one pound of bok choy, when it's blanched, you will see a really small amount

  • Because we need to squeeze out all the excess water

  • Let's start with the garlic

  • One chopped green onion

  • We minced one garlic clove and one green onion

  • Here we go

  • This is doenjang, soybean paste

  • Around two tablespoons

  • And we need gochujang

  • Around two teaspoons

  • Just a pinch of sugar, make it really tasty

  • Little bit

  • And sesame oil!

  • About two teaspoons

  • And well mix!

  • Already smells good!

  • My appetite is coming alive!

  • Do you hear the sound?

  • The boiling sound?

  • My water is really, really, really boiling vigorously

  • Sesame seeds, seasoning mixture, it's prepared

  • All we are waiting for: bok choy!

  • Blanch one or two minutes until the stem part is withered and soft

  • You have to shock these guys in cold water

  • And stop the cooking plus make it more green

  • Isn't it simple?

  • So far, so simple, isn't it?

  • You need to really squeeze

  • Are you strong enough?

  • Okay like this

  • Nice!

  • Then, let's mix

  • Mmm, really smells good!

  • Oh, my mouth is watering right now!

  • (laughs)

  • Okay and sesame seeds

  • This is rice cooker

  • My mom bought this for me

  • Because I always travel

  • Sometimes I skip meals because I have to work in the hotel

  • So she bought this for me

  • I made also shrimp

  • Korean-style shrimp pancakes

  • And this is Sae-u Sogeum Gui, the shrimp grilled on salt

  • And then now, clam stew

  • Wow!

  • Great!

  • This is my meal!

  • Clam stew and shrimp

  • And I needed some vegetables, so we made Bok Choy Doenjang Muchim today

  • Which one do you like the best?

  • You like this? This?

  • What makes my mouth really water is this guy

  • First, I will have some stew

  • Ah! Very good!

  • Good, good

  • Really umani taste

  • Mmm!

  • Mmm!

  • I missed the vegetables a lot

  • This Bok Choy Doenjang Muchim, really awesome

  • Shrimp

  • Mmm

  • Rice

  • Whenever I make this Doenjang Muchim, it reminds me of my friend

  • She is kind of plump and she'll always worry about her weight

  • She joined a weight-loss program in Korea

  • And she has to stay in the house for one month

  • And she has to follow all the food that they provide

  • She cannot make, she cannot do anything, just hanging around for one month

  • And then after one month, she lose a lot of weight

  • But one day, she couldn't resist

  • Because in the neighborhood, some neighbor must have made this Doenjang Muchim

  • With something like some gogumajulgi, it's sweet potato stems

  • Same method we make

  • Blanch this and mix with seasoning sauce

  • And when she smelled this seasoning mixture with lots of strong sesame oil

  • Her mouth is just so watery

  • Oh my!

  • She said I didn't miss any Bulgogi or meat or expensive meat, you know, some Galbi

  • But she couldn't resist when she smelled this

  • See? This is such a delicious side dish

  • So today, we made Bok Choy Doenjang Muchim

  • Enjoy my recipe!

  • See you next time!

  • Bye!
