- Hey everyone.
It's Natasha of natashaskitchen.com.
Today we're making a broccoli salad with apples.
My mother-in-law shared this recipe
with us about seven years ago and
it has been a family favorite ever since.
Start with the broccoli.
To take advantage of the whole thing,
peel the stem and chop it right into the salad.
Grate one large carrot, then thinly slice
a small purple onion, and chop an apple.
Put all of your chopped ingredients
into a large salad bowl along with half
a cup of toasted pecans and half a cup of dried cranberries.
The dressing is simple but so flavorful.
Whisk together half a cup of mayo,
half a cup of sour cream, and two tablespoons
of fresh lemon juice.
Season that with half a tablespoon of sugar,
a quarter teaspoon of salt, and a pinch of black pepper.
Once it's creamy and smooth,
you're ready to pour it over your salad.
Add the dressing to taste and toss
your salad until every bite is coated
in that creamy, delicious dressing.
Alright, going in for the taste test.
And this is lunch for me so I'll
probably eat, like, half of it.
There we go.
A little bit of everything.
(chuckles)
Oh yeah.
The flavors and the textures just work so well together.
I mean you've got the crisp broccoli,
the crunchy nuts, and those tangy,
sweet bites of apples and cranberries.
Wow!
And I totally love that creamy lemon dressing.
This recipe is definitely a keeper.
