Commercially, candies are freeze-dried using a specialized machine that first flash-freezes the
candies and then creates a vacuum to remove all the air and moisture. This freeze-drying
technique results in candies that have a longer shelf life (up to 25 years) and do not require
refrigeration, making them a convenient option for certain applications, like travel snacks.
Some of the best candies to freeze-dry include Skittles, Saltwater Taffy,
and marshmallows. These candies, after being freeze-dried, deliver a unique taste experience,
making them even more flavorful. However, not all candies are suitable for freeze-drying.
For example, chocolate covered nuts are generally best enjoyed without freeze-drying,
as their fillings may not respond well to the freezing process.
