  • Let's cut the sweet potato.

    まずさつま芋を切りましょう。

  • Wash the potato beforehand and trim off the both ends.

  • If it is thick, cut vertically in half.

  • Cut the potato into rolling wedges while rotating it toward you.

  • Let the potato sit in generous amount of water for around 10 minutes in order to keep its color as it is.

  • Let's make Daigakuimo.

    さあ、大学芋を作りましょう。

  • Put the vegetable oil

    中華鍋に油大1、

  • and sugar in a pan.

    砂糖大2を入れます。

  • Lightly drain the potato wedges.

    芋の水気を軽く切り、

  • Drop

  • and spread them in the pan.

  • Don't wipe off the moisture from the potato

    この時芋の水気を拭き取らないで下さい。

  • in order to get a soft and fluffy texture inside.

  • Cover and turn on the burner.

  • Steam and fry at medium low heat.

    中火の弱で蒸し焼きにします。

  • When it starts to make crackling sounds,

  • quickly swirl the pan.

    鍋を大きく揺すってください。

  • After cooking for 2 minutes, remove the lid and flip over each potato wedge with a pair of saibashi chopsticks.

    2分経ったら蓋を開け、菜箸で一つ一つ返します。

  • Re-place the lid

  • and continue steaming and frying for 2 more minutes.

    また2分ほど蒸し焼きにします。

  • Remove the lid

  • and flip over the wedges to brown the surface evenly.

    均等に色付くように返します。

  • Reduce the heat if the pan becomes too hot.

    火が強い場合は弱めてください。

  • Repeat the process until the surface becomes an appealing shade of golden brown.

    美味しそうな焼き色がつき始めるまでこの作業を繰り返します。

  • Pierce the potato with a bamboo skewer.

    竹串を刺して固さを見ます。

  • When it's soft enough for the skewer to go through,

    抵抗なく刺さったら

  • drop in a few drops of soy sauce.

    醤油を数滴垂らします。

  • If you like it crispy on the outside,

    飴がパリパリッとしたのがお好みでしたら

  • stir-fry longer at this stage.

    もう少し混ぜ続けてから醤油を入れて下さい。

  • Quickly swirl the pan and it is ready to serve.

    全体に大きく混ぜてできあがりです。

  • Serve the Daigakuimo on a plate

    お皿に盛り、

  • and sprinkle on the toasted black sesame seeds.

    黒ごまを振りかけます。

  • Just a few drops of soy sauce is enough to bring out the potato's sweetness.

    数滴の醤油は甘さを引き立てるためです。

  • Only a minimum amount of oil is needed for this Daigakuimo recipe.

    この大学芋は最小限の油でできます。
