  • Let's make the salt water to knead into the flour.

    粉に練り込む塩水を作りましょう。

  • Dissolve the measured salt (15g) in the water (130ml) completely.

    水(130ml)に塩(15g)を加え塩を完全に溶かします。

  • Sift the wheat flour into the large bowl.

    大きめのボールに、粉をふるいにかけて入れます。

  • This wheat flour is specially made for udon noodles.

    この粉はうどん専用の粉です。

  • We recommend that you use the flour with protein content 9.0 to 9.5%.

    (手に入らない場合は)たんぱく質9.0~9.5%の粉を使って下さい。

  • Roughly flatten the flour with your fingers.

    ざっと表面を平らにし

  • Gradually mix in two third of the salt water.

    まず分量の2/3位の塩水を少しずつ回しながら加えます。

  • Toss to coat and moisten the flour evenly.

    すかさず下から持ち上げるようにして全体に水を行き渡らせます。

  • The dough softness depends on the room temperature, humidity and a type of wheat flour,

    生地の硬さはその日の天候や粉の種類により変わります。

  • so gradually add the salt water and adjust as you go.

    塩水は、生地の状態を見て徐々に加えてください。

  • Mix in the rest of the salt water but leave 1 tsp of it in case you need to adjust the moistness.

    最後の調整のための塩水を少量(約小1)残して回しかけ、

  • Give it a quick mix with your hand.

    指を広げて手早く回転させて混ぜます。

  • Scoop the damp flour with your hands and mix until crumbly.

    また、両手で底からかきあげるように混ぜて粉全体がそぼろ状になったら完了です。

  • If the dough is too dry and powdery, add the remaining salt water.

    もしここで粉っぽいようでしたら残りの水を加えて下さい。

  • Press the crumble flour mixture with your hand and form into a dough.

    そぼろ状になった生地は、寄せて押し固めて一塊にします。

  • Put the dough in a food storage bag and fold the bag in the middle.

    生地を食品用保存袋に入れ、二つに折ります。

  • The dough is not smooth at this stage and it will easily break apart.

    この段階では、まだ生地はぼそぼそしています。

  • Let's knead the dough with a rolling pin.

    麺棒を使ってこねましょう。

  • Use your body weight to press the dough.

    上から体重をかけて延ばします。

  • Gradually shift the rolling pin and spread the dough until the bag is filled.

    麺棒を少しずつ移動させ、生地を袋一杯になるまで延ばします。

  • Roll up the dough in the bag

    袋の中でくるくる巻いて一塊にし、

  • and turn it by 90 degrees.

    90度向きを変えます。

  • Fold the bag in the middle and spread the dough into a sheet.

    袋を真ん中でたたみ、また延ばしていきます。

  • Repeat the kneading process around 5 to 6 times.

    この作業を5〜6回繰り返します。

  • It will take about 10 minutes to get the smooth even texture.

    滑らかな生地になるまで約10分かかります。

  • To see if the texture is even, remove the dough from the bag.

    袋から取り出し、生地が滑らかで均一になっているのを確認します。

  • If the dough is not smooth enough, give extra kneading process.

    均一になっていない場合はもう1~2回この作業を行います。

  • Press the dough into 1 inch thickness and rest it in the bag for 10 minutes.

    押さえて2cm厚さにし、袋の中で10分間休ませます。

  • The dough becomes a bit softer in the resting process and you can easily shape the dough.

    10分間休ませると生地は少し柔らかくなって扱いやすくなっています。

  • Face down the dough on its smooth surface, press it with your palm to even thickness.

    綺麗な面を下にして置き、手の平で押さえて厚さを均等にします。

  • Fold the edges of the dough toward the center.

    生地の周りを、中心に向かって折り畳んでいきます。

  • Be careful not to leave the air in the dough.

    中に空気が入らないように気をつけましょう。

  • Rotate and shape the dough into a ball.

    回して丸い形にします。

  • Replace the dough in the bag and leave it at room temperature for 2 hours for fermentation.

    袋に入れて室温で2時間寝かせます。

  • Let's make the udon noodles.

    うどんをつくりましょう。

  • Spread the corn starch on the pastry board and also dust on top of the dough.

    麺打ち台に打ち粉をし、生地の上にも薄く付けます。

  • Apply your weight and press the dough ball with the rolling pin.

    体重かけて、麺棒で生地を強く押して延ばしていきます。

  • Flatten the half of the dough away from you

    中心から向こうに向かって平らにし、

  • and flatten the other half toward you.

    次に手前に向かって平らにしていきます。

  • Rotate the dough by 90 degrees and repeat the process.

    90度回して同様にします。

  • Next, roll out the half of the dough from you

    今度は中心から角に向かって麺棒を転がし、

  • and roll out the other half toward you.

    手前の方にも転がして延ばします。

  • Rotate it by 90 degrees and repeat the rolling process.

    90度回して同様にします。

  • Roll up the dough around the pin

    ある程度薄くなったら、麺棒に生地を巻き付け、

  • and roll it down on the pastry board.

    転がしながら延ばしていきます。

  • Rotate the dough sheet by 90 degrees and repeat the process.

    90度回して同様にします。

  • Spread the dough evenly in a square and make sure it has less than 1/8 inch thickness.

    全体が2~3㎜厚さでなるべくきれいな四角形に延ばします。

  • Apply the corn starch on the dough

    延ばした生地の上に打ち粉をし、

  • and roll it around the rolling pin.

    麺棒に巻き付けます。

  • Dust the starch on the cutting board

    まな板に薄く打ち粉をし,

  • and spread the dough on the surface.

    麺棒を手前に引き寄せて生地を広げます。

  • Put generous amount of starch on the dough,

    たっぷり打ち粉をし、

  • fold it

    畳んで、

  • and put on the starch again.

    また打ち粉をします。

  • Fold the rest of the dough but be careful not to overlap the creases.

    残りも折り畳みますが、折り目が重ならないようにして下さい。

  • The dough easily stick together

    生地は非常にくっつきやすいので

  • so put the corn starch generously for each fold.

    折るたびにたっぷりの打ち粉をして下さい。

  • Place the baking sheet near the cutting board.

    バットを準備します。

  • Dust the starch on top of the folded dough.

    畳んだ生地の一番上にも打ち粉をします。

  • Position the knife vertically to the creases and cut the dough into noodles.

    包丁は生地の折り目に直角にあてて切ります。、

  • Shake off the starch and line up the udon noodles on the baking sheet.

    途中打ち粉を払いながらバットなどに小分けにして並べていきます。

  • The noodles are less than 1/8 inch width now but almost double in size after cooking them.

    麺は2~3㎜幅に切りますが、茹でると1.5~2倍になります。

  • If the noodles stick together, gently tear the noodles off one by one.

    くっついた場合は、裂くように1本1本丁寧にばらしてください。

  • Be careful not to cut your hand.

    くれぐれも手を切らないように注意してください。

  • Let's cook the udon noodles.

    うどんを茹でましょう。

  • Lightly shake off the corn starch and submerge half of the udon noodles in the boiling water.

    打ち粉を払ってお湯の中に半量のうどんを入れます。

  • Gently stir with the chopsticks so that the noodles don't stick to the bottom of the pot.

    うどんが鍋底にくっつかないようにそっと菜箸で動かします。

  • When the water starts to boil, reduce the heat to low.

    沸騰してきたら火を弱め、

  • Cover with the lid and cook for 13 to 15 minutes.

    蓋をして13〜15分間茹でます。

  • If the water is boiling hard, remove the lid and lightly stir the noodles.

    激しく沸騰している場合、蓋を取り菜箸で軽く混ぜます。

  • Use generous amount of water to cook the noodles,

    たっぷりの湯(麺の重さの10倍以上)で茹でて下さい。

  • otherwise the water gets starchy and the salt in the noodles doesn’t dissolve into the boiling water.

    そうしないと、茹で汁がどろどろになり、うどんの塩分が湯の中に出てきません。

  • Pick a noodle with the chopsticks, immerse it in cold water

    時間が来たら1本水に取り、

  • and see if it has the texture you like.

    好みの硬さになっているか見て下さい。

  • Take the pot to the sink,

    流しに持っていき、

  • strain and rinse the udon noodles with running water.

    ざるに取り、流水で優しく洗い表面のぬめりを取ります。

  • Using fresh cold water prevents the udon noodles from getting gooey and improves the texture.

    冷たい水で洗ってぬめりを取ることによってコシのある美味しいうどんができます。

  • Drain the noodles well

    しっかり水気を取って

  • and serve them on a dish.

    器に盛ります。

  • Please enjoy the udon as soon as possible,

    うどんは出来上がったらなるべく早く食べましょう。

  • otherwise it will become soggy.

    時間が経つとコシはなくなります。

  • Spring onions, grated ginger and sesame seeds go great with noodle soup.

    つけ汁に青ねぎ、おろし生姜、すりごま等薬味を添えて頂きます。

  • This homemade udon is absolutely delicious with chewy but nice and refreshing texture.

    コシがあり、のど越しの良いとても美味しい手打ちうどんです。
