also known as pumpkin pie spice,  is a blend of spices traditionally  

used in pumpkin pie. The blend generally  includes cinnamon, nutmeg, ginger, cloves,  

and sometimes allspice. Cinnamon is usually the  dominant flavor in the mix, which is why pumpkin  

spice often tastes strongly of cinnamon. The  other spices, like nutmeg, ginger, and cloves,  

add depth and complexity to the flavor.  Despite its name, pumpkin spice doesn't  

contain pumpkin but is meant to complement  the flavor of pumpkin in various dishes.
