  • It is often said it is the little things in life that give pleasure.

  • For Hironori Ikeno, and his restaurant patrons

  • in the old Tokyo district, Nohachi,

  • it's these really tiny pieces of sushi.

  • More like a scientist than a sushi chef,

  • he has been crafting this itsy bitsy edibles for over a decade

  • using just one grain of rice.

  • I actually started the whole thing for a joke with a costumer

  • whom I serve the minuscule sushi to.

  • And I started to wonder, how tiny can I make it?

  • Each piece takes 5 minutes to create

  • versus 1 minute for its larger cousin.

  • Despite their diminutive size,

  • these sushi minis still pack a lot of flavour

  • says regular costumer, Hisako Okumoto.

  • The white fresh fish and crushed Japanese radish and chilli

  • which gave me that spicy kick.

  • Each grain of rice has actually quite a distinct taste.

  • Ikeno usually makes some miniature pieces for only children, couples and foreigners

  • who might wanna order some regular sushi

  • or risk going home a bit hungry.
