- Hey, everyone.
It's Natasha of natashaskitchen.com.
We've partnered with Tabasco to create a holiday menu
and we've kind of saved the best for last.
Breakfast.
I can eat breakfast any time of day.
And we've come up with a really special
breakfast casserole bites recipe.
They are loaded with fresh and wholesome ingredients
and, of course, Tabasco.
Because Tabasco and eggs just works.
You guys are gonna love this recipe.
Start by preheating your oven.
Then chop six ounces of bacon into half inch pieces.
Saute in a large nonstick skillet over medium-high heat
until it's browned and crisp.
Transfer bacon to a plate and spoon out any excess oil,
leaving two to three tablespoons in the skillet.
Add half a cup of finely chopped onion
and saute for two minutes until softened.
Meanwhile, peel and grate the potato
then squeeze it dry with your hands.
You'll be amazed at how much water comes out.
I also pat it dry with paper towels.
Add them to the pan,
and it's important that you squeeze them dry
because otherwise they can turn gummy
and stick to the bottom of the pan.
Saute for five to seven minutes
or until they're nearly cooked through,
then take them off the heat.
In a large bowl, whisk together eight large eggs,
half a cup of half and half
and two teaspoons of Tabasco sauce.
The Tabasco really enhances the flavor of the eggs
and seasons this perfectly.
Notice I didn't add any salt or pepper.
Add the slightly cooled potatoes,
two cups of coarsely chopped fresh spinach
and a cup of grated cheddar,
reserving about half a cup of cheese for the topping.
Grease or line a 12-count muffin tin with silicone liners.
I'll link to these in the notes below.
They make clean up and serving really easy.
Divide the casserole mixture evenly into the pan
then top with your crispy bacon and remaining cheese.
Bake at 375 degrees Fahrenheit for 22 to 23 minutes
or until puffed and lightly browned.
Whoo!
Time for the taste test.
Yum.
And once they come out of the oven
you wanna give them a few minutes to cool down,
otherwise they're a little bit hot to handle.
But I can't be that patient.
Here we go.
Alright.
See how easily they come out of those liners?
I love those silicone liners.
Alright.
Mmm, they're so moist and fluffy
and they're completely loaded with spinach and potatoes
and bacon and cheese.
This is pretty much a meal in itself.
And it's family friendly the way it is,
but if you like a little more heat
add some more of that Tabasco sauce.
I love serving it with more sauce.
