  • - Hey everyone, it's Natasha of natashaskitchen.com.

  • Let's make some Zuppa Toscana.

  • It's our version of Olive Garden's most popular soup.

  • (cheerful pop music)

  • This entire recipe is made in one pot,

  • so we start with the toppings.

  • Chop six to eight ounces of bacon,

  • place in a large pot over medium-high heat,

  • and saute until browned.

  • Transfer your crispy bacon to a paper towel-lined plate,

  • and spoon out any excess fat,

  • leaving behind one to two tablespoons.

  • Next, add one pound of hot Italian sausage,

  • break it up with your spatula,

  • and saute just until cooked through.

  • Remove the sausage to a paper towel-lined plate

  • to soak up any extra oils.

  • While the sausage is cooking, I quickly chopped my onions

  • so it's ready to add to the pot.

  • Continue sauteing the onions over medium-high heat

  • for about five minutes or until softened and golden.

  • Now add your ten large cloves of pressed

  • or finely minced garlic and stir for another minute.

  • Pour in four cups of chicken broth

  • along with six cups of water,

  • and while that's coming to a boil,

  • chop your potatoes into bite-sized pieces.

  • Into the pot they go, we're gonna cook that

  • for about thirteen to fourteen minutes

  • or until the potatoes are easily pierced with a fork.

  • While that's going, prep your kale.

  • To strip the kale, grab on to the stem

  • and pull the leaves right off.

  • Chop the leaves into bite-sized pieces

  • and when the potatoes are nearly cooked,

  • add kale to the pot along with your cooked sausage.

  • Stir those in and bring the soup to a light boil.

  • Add one cup of cream, then bring it to a boil again.

  • Finally, season your soup to taste,

  • I added just a dash of salt and a sprinkle of pepper.

  • Take it off the heat and it's ready to serve.

  • Ooo hoo hoo, lunch time!

  • I know my husband's hungry too,

  • because he's been waiting for this as well,

  • and he has to suffer through my taste test.

  • But I guess so do you, sorry about that.

  • Alright.

  • There you go, and I like to garnish it with some bacon,

  • that yummy crispy bacon that I browned early on,

  • and then of course a little bit of Parmesan cheese,

  • or a lot a bit.

  • Yum! Oooo, can't wait can't wait!

  • (soft chewing) (satisfied moaning)

  • Wow! The ingredients in here are so simple,

  • but it has so much great flavor.

  • And you know if you wanted to make it more kid-friendly,

  • you can totally use a mild sausage

  • and it'll still be delicious.

  • This is absolutely a family favorite in our house

  • and I hope it becomes that for you too.
