Today we're gonna be introducing a style of food that most of you guys have probably not had before.

今日は、ほとんどの人が食べたことがないであろうスタイルをご紹介します。

I know I've never had it.

食べたことがないのはわかっている。

I know I have, a lot!

Hi, I'm Crystal. I'm a Taiwanese wannabe fob,

こんにちは、クリスタルです。私は台湾人のフォブです。

and today we're talking about Taiwanese breakfast!

で、今日は台湾の朝ごはんの話です!

Taiwanese breakfast.

台湾の朝食。

Here's the spread.

ここにスプレッドがあります。

Alright, so what can you tell us about, like, what we're looking at right now.

今見ているものを教えてくれないか？

My favorite is dou jiang, mi jiang.

好きなのはドウ・ジァン、ミ・ジァン。

Mi jiang is a little bit sweeter but I like mi jiang more.

ミ・ジァンは少し甘めですが、私はミ・ジァンの方が好きです。

Okay, mi jiang, what's the difference?

さて、ミ・ジャン、何が違うの？

Uh it's peanut and this is soybean.

えーと、これはピーナッツで、これは大豆です。

I'm not gonna lie, I thought that was gravy.

正直、グレービーソースだと思っていた。

Mi jiang looks like gravy.

ミ・ジャンは肉汁のように見える。

You tiao is dragon tail.

ティアオは竜の尻尾です。

It's kind of like a Chinese donut but it has less flavor

中華ドーナツのようなものですが、味が薄いです。

cuz you're using it to dip into things.

あなたはそれを使って物事に浸っているから

I feel like Taiwanese breakfast is kind of like the other Chinese breakfast.

台湾の朝ごはんって、他の中華の朝ごはんに似てる気がする。

In Taiwanese breakfast, we're taking the mi jiang, which is a sesame paste,

台湾の朝食では、胡麻和えの「ミ・ジャン」をいただくことにしています。

and we're dipping into that.

と、それに浸っています。

And it tastes a little beanie man.

そして、味はビーニーマンの味がする。

It was sweet, beanie, kind of like red bean like Richie said.

リッチーが言ってたような小豆のような甘さのビーニーでした。

I am used to more of the soymilk.

豆乳の方が慣れてきました。

Everybody bring your ladles. Come around, come gather around.

みんなお玉を持ってきて周りに集まれ

Can I have more soymilk madam? – like the orphan that you are.

豆乳のおかわりをお願いできますか？

Dou jiang, soymilk.

ドウ・ジァン、豆乳。

So what you're noticing about this soymilk is

そこで、この豆乳で気になるのは

it's not like the Yeo's when you get in the can.

缶詰になった時のイエオとは違うんだよな

That's what I was expecting.

それを期待していました。

Everybody in Asia was drinking soymilk before western people introduce milk.

西洋人が牛乳を導入する前のアジアではみんな豆乳を飲んでいました。

There's no adjective to describe the flavor of that other than just breakfast.

その味を表す形容詞は朝食以外にはありません。

Luo bo gao jia dan.

羅坊高家団。

Man, one thing I learn today is Taiwanese breakfast is really eggy,

今日学んだのは、台湾の朝食は本当に卵が多いということだ。

but I like eggs.

でも私は卵が好きです。

Taiwanese breakfast, eggs on eggs!

台湾の朝ごはん、卵かけごはん!

Eggs on eggs on eggs! Eggs on eggs on eggs!

エッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオンエッグオン！

What are we gonna find underneath these eggs?

この卵の下には何があるのかな？

Cong you bing with eggs.

コング君は卵でビンビン。

So this is the green onion pancake with eggs.

ということで、これが卵入りネギパンケーキです。

Okay so there's two…that's a two-faced slice. - Mhmm

なるほど............二刀流だな。- ふむふむ...。

I think it's important to know that you have a green onion pancake with a green onion egg.

ネギのホットケーキにネギの卵が入っているのがポイントですね。

Yo these Taiwanese people like these little surprises man.

この台湾の人たちは、このような小さなサプライズが好きなんだよ

Under the egg you would just get all these new presents.

卵の下には新しいプレゼントが入っています。

Fan tuan.

ファン・トゥアン

So it's pretty much rice wrapped, inside there's a bunch of different stuff.

だから結構ご飯が包まれていて、中には色々なものが入っています。

So inside it has you tiao, again.

その中にはまた君がいるんだ

And then this has pork sung, eggs and pickles.

そして、これには豚の歌と卵と漬物があります。

We added the pickles.

漬物を追加しました。

You know what I love about this one?

これのどこが好きか分かるかな？

Cuz you have so many different flavors and textures going on.

いろんな味と食感があるんだね

It's kind of sweet too.

それもなんだか甘いですね。

You got the sauce, sweet sticky rice.

ソースは甘めのもち米だな

You got the egg.

卵を手に入れたんだな

You got the preserved veggies.

プリザーブドベジがあるんですね。

You have the Chinese donut.

中華ドーナツがあるじゃないですか。

And then you have the pork sung.

そして、豚の歌が出てくる。

I just feel like I'm eating Taiwanese chipotle.

台湾のチポトレを食べているような気がして仕方がない。

I feel like it's like a complete meal in one bite.

一口で完食という感じです。

Niu rou shao bing.

ニウ・ルー・シャオ・ビン

It's like pastry, inside is egg again,

菓子パンのようなもので、中はまた卵。

pickles and meat and it's very flaky.

漬物とお肉が入っていて、とてもぺろりとしています。

Uh so like a Taiwanese sandwich.

台湾のサンドイッチのように

So flaky.

ぺらぺらですね。

Now you'd think that this would taste just like the other dishes

これで他の料理と同じ味になると思うだろう

cuz it has similar element,

似たような要素があるから

but it actually tastes very different than fan tuan

しかし、実際にはファン・トゥアンとは全く違う味がします。

cuz the beef is sweet.

牛肉が甘いから

I think Taiwanese people like their food pretty damn dry.

台湾人はかなり辛口の料理が好きなんじゃないかな？

Like all their snacks.

彼らのお菓子のように

I'm familiar with this but it looks a little bit different than how I'm used to seeing it.

見慣れているのですが、見慣れているのとはちょっと違う感じがします。

Xiao long bao directly translated into English is little dragon buns,

小龍包を直訳すると「小龍包」となります。

but traditionally we call it, like, steamed pork dumplings.

でも伝統的には蒸し豚団子みたいな呼び方をしています。

I know dragons are really trendy right now, like how to train the dragon,

龍が如くの鍛え方とか今流行りなんだよな

but guess what, how to train the dragon bun.

でもね、竜饅頭の鍛え方を当ててみて。

Gua bao

ガバオ

The great makings of a gua bao are the perfect balance

グァーバオの大マキが絶妙なバランスで

between the crushed peanuts, the pickled vegetables, the pork belly, the cilantro,

砕いた落花生、漬物、豚バラ、コリアンダーの間に

and it's like you can't really have too much of any one otherwise it will go off the balance.

と、どれか一つを持ちすぎないとバランスを崩してしまうような気がします。

Xiang gu rou bao.

祥国路饭。

So it's mushroom and meat.

キノコと肉なんですね。

I'll take a bite and give my opinion.

一口食べて意見を言ってみます。

Yo Crystal,

ヨ・クリスタル

A different flavor, different spices than everything we've been eating.

今まで食べてきたものとは違う味、違うスパイス。

The mushroom got the flavor, a little spicy!

マッシュルームが味を出してくれました！少し辛めの味付けになりました

I think it's interesting that a lot of the food looks similar in color and everything,

色も何もかも似ているように見えるものが多いのが面白いですね。

but actually tasted all a little bit different.

が、実際にはすべての味が少しずつ違っていました。

You can't be shallow with Taiwanese breakfast. You have to get to know it,

台湾の朝ごはんは浅くてはいけません。知る必要があるんだよ。

know its personal, required taste.

その個人的な、必要な味を知ることができます。

We still have another shao bing they gave us.

貰ったシャオビンがまだ残っています。

That is a Chinese donut hotdog.

それは中華ドーナツのホットドッグ。

It's so flaky I think I cut my mouth.

口を切ってしまいそうなくらいペラペラです。

That's like eating a donut wrapped around a croissant.

クロワッサンにドーナツを巻いて食べるようなものですね。

That's a craziest dish to me actually.

それは私にとって最もクレイジーな料理です。

The geoduck.

ジオダックだ

It's so crazy but yet so simple.

クレイジーだけどシンプルなんです。

From now on it's called the geoduck Taiwanese breakfast food.

これからは台湾の朝ごはんはジオダックと呼ばれています。

You're putting a stamp on that name?

その名前にスタンプを押すのか？

That's it. Boom! Geoduck.

それはそれです。ブーム！ジオダック

Guo tie

郭タイ

Potstickers

ポットスティック

I think the feeling is different from the xiao long bao to the guo tie.

シャオロングバオとグータイでは感じ方が違うと思います。

The guo tie has some vegetables in it.

グータイには野菜が入っています。

Yeah I feel like the xiao long bao was more of a pure pork flavor.

ああ、小龍包はどちらかというと純粋な豚肉の味だったような気がする。

The dou hua. Dou hua.

斗華のこと。斗華。

Dou means bean right? Hua means flower.

斗は豆の意味ですよね？華は花という意味です。

Yeah and I like how it's not too sweet.

甘すぎないのもいいね

I feel like Chinese people don't actually have a sweet tooth.

中国人って実は甘党じゃない気がする。

You always see, like, Chinese moms, like, drink some like sodo like even a Capris Sun and just be like

中国人のママはいつも見てる カプリスサンのような ソーダを飲んで

too sweet, too sweet.

甘すぎる、甘すぎる

Taiwanese like to keep it traditional. They like to keep it traditional with their snacks.

台湾人は伝統的なものを好む彼らは伝統的なお菓子を好んで食べています。

They like to keep it traditional with their breakfast.

彼らの朝食は伝統的なものが好きなのです。

Taiwanese, we keep it og!

台湾人は、私たちはそれをogに保つ！
